This was such an interesting and wonderful salad on a hot afternoon.  We had this yummy Summer Watermelon Salad at Clear Creek Cidery and Eatery in Idaho Springs, Colorado.
Ingredients:
Mixed Greens
Cider Vinaigrette
Summer Watermelon
Watermelon Radish
Julienned Carrots
Diced Cucumber
Fresh Basil
Goat Cheese
Pickled Red Onion
Finished with a Balsamic Drizzle
