If you are interested in knowing what nutritional value is in vegetables, I am going to share the root vegetables next.  Carrots are up first.  I am including some of the nutrition information available on USDA and Wikipedia for carrots. Also, I did some rounding.  I am including the items normally listed on the Nutrition Facts Label on food products.

Nutritional Value per 100 g (3.5 oz) of Raw Carrot

Calories:              41

Fat:                        0.2 g

Sodium:              69.0 mg         5%

Carbohydrates:     9.6 g

Sugars:                  4.7 g

Dietary Fiber:        2.8 g

Protein:                 0.9 g

Vitamin C:             3.6 mg         4%   – normally the nutrition facts label includes vitamin D

Calcium:             33.0 mg         3%

Iron:                     0.3 mg   2%

Potassium:       320.0 mg     7%

Water                 88.0 g

Don’t forget that carrots are a great source of beta carotene& Vitamin A.
