Flavored Butter with Goodies from the Garden

I love butter with herbs, but I decided to also make garlic butter this year.  Wow is it good!  It is great on potatoes and for grilled cheese sandwiches.  I usually make a few at a time so I soften two sticks of salted butter (or unsalted if you want) and use a garlic press to squeeze  the garlic juice out of 3 cloves into the butter.   Mix it and your are done.

You can put in the refrigerator to use it now or freeze it for later on.  This time of the year I like to save some for the winter months so I use the small 1 cup freezer containers from Ziploc or Glad.  Each one holds a stick of butter.  Also, you can roll it before freezing it so it is in the shape of a log and seal it in plastic.

As for herbs, I also make dill butter and chive butter.  The dill butter is good with toast and vegetables and the chive butter is good with potatoes.  I soften the butter and take fresh chopped dill or chives and add it to the butter until it tastes good!  Go slow when adding the chives and dill because they have a strong flavor.

Another idea is to take the garlic butter and add some chives for a perfect topping for the baked potatoes!
