Peach Salsa

We bought some peaches and used our Anaheim green chili peppers and shallots from the garden for this yummy salsa that complemented our Mahi Mahi dinner.

Ingredients:

  • 2 large peaches skinned and pitted
  • 2 Anaheim green chili peppers (or Jalapenos)
  • 2 small shallots (or onions)
  • cilantro
  • lime juice
  • coarse Kosher salt

Dice the peaches into small cubes.  Slice the peppers in half lengthwise and remove the seeds. Chop the peppers and shallots.

Combine and sprinkle with finely chopped cilantro,  lime juice and  salt to your liking!

Also, you can blend until smooth so it is easier to use with tortilla chips!
