While you see some variations in the color of Bok Choy, you will also see different types of bok choy based on height.
Dwarf – this one is tiny and fits in the palm of your hand at the mature stage.
Small – this one is usually around 3 to 6 inches.
Medium – this type grows between 6 to 10 inches
Large – this type of bok choy grows larger than 10 inches.
Also, there are different types based on the shape of the leaves.
Savoy – this is the least common when searching for seeds.
Serrated
Rounded – this is the most common type of leaves.
While some folks say bok choy is cabbage, I think it deserves its own name because bok choy grows thicker stems and cabbage tends to form a head. It is not too late to check out my article on the types of cabbage.
