First of all, these are not eyeballs and I am not trying to make a Halloween dish! When we have lots of cherry tomatoes overflowing from the garden and fresh basil, Mom and I love to buy some mozzarella and make tomato, basil & mozzarella salad. It doesn’t get simpler than this:
Ingredients:
- Tomatoes (full size or cherry)
- Fresh Mozzarella Cheese (in a log or pearls)
- Fresh Basil
- Olive Oil
- Kosher Salt
- Ground Pepper
Slice the cheese and tomatoes & stack them. As you can see in the picture above, a nice twist is to use cherry tomatoes and fresh mozzarella pearls. You can scoop out the tomato seeds and set the mozzarella inside!
Put a piece of basil on top. Don’t forget I like to grow the purple basil – it is so much hardier.
Drizzle with olive oil and sprinkle some salt and pepper. It tastes good even without the salt and pepper.
This is the main reason that I grow basil!
