Sunchoke Bisque

After eating the Red Beet Tartare at Bloom in Roanoke, VA, the next course for me was the Sunchoke Bisque for Valentine’s Day.  This bisque was fantastic.  I might have to start growing sunchokes!

Ingredients:

Sunchoke

Oat Milk

Acorn Oil

Sheep’s Milk Feta

Sunchoke Textures – I have to be honest: I have no idea what this means!
