If you recall, I am growing several varieties of potatoes this year. The purple majesty potatoes have purple flesh and skin. We roasted them by doing the following.
Roasted Potatoes
- Lightly coat the potato pieces with olive oil
- Sprinkle with kosher salt and ground pepper
- Add some fresh rosemary
- Roast for 20 to 25 minutes at 425 degrees.
We also mashed some of the purple majesty potatoes another night. While it looks bizarre, they were really yummy!
We also mashed some of the red skinned which have white flesh and the mountain rose potatoes which have rose skin and flesh.  Take a look at these beauties. . .
Mashed Potatoes
- Boil the potato pieces.  The trick to mash them is to boil them until they start falling apart.
- Drain the water and slowly add butter and milk to the potatoes until it is the right consistency.
- Mix the potatoes with either a hand held masher or a mixer depending on how smooth you want them.
My Mom prefers to use a mixer and my husband prefers the hand held masher.  I use both methods so everyone stays happy!
