Harvest and Store Onions

Usually I harvest my onions late July to early August.

Harvesting Tips:  1) Onions will let you know when it is time to harvest because the green stem will flop over. 2) Since the bulb forms above ground, onions are easier to harvest than garlic.

Onions Curing for Storage

Curing Tips:  3) Cure the onions in a warm, dry and shady spot outside or in a garage.  4) Lay the onions on racks so there is some air circulation.  5) Put newspapers or paper towels underneath the racks to catch the dirt.  6) After a few weeks, the onions should be cured which means that the bulbs will feel firm and have papery skin on the outside and the leaves and stem will be brown.  7) Cut the stem to about an inch above the onion and the roots close to the bottom.  8) If the inside of the stem is still green, give the bulbs a few more days of curing.

Storing Tips:  9) Store the onions on a movable rack so you can move the onions as needed due to temperature changes in your home.  For instance, I move the onions to my basement in the summer and back to the garage in the fall when the temperature cools down and the heater comes on inside.  The ideal location is dark and cool.

Freezing Tips: 10) Remove the wrappers.  11) Slice the onions to the size you want to use them in the future.  12) Place the onion slices on a tray or plate and freeze them individually.  12) Store the slices in a vacuum sealed bag or container.
