Harvest and Store Arugula

If you love harvesting arugula in the spring, you love it more in the fall!

Harvesting Tips:  1) The maturity date on the seed packet tells you approximately how many days from the time you sowed the seed outside or from the time you transplanted the arugula seedling outside until you can harvest the whole arugula plant.  2) You can harvest the whole arugula plant and cut the roots off.  Don’t forget to put the roots and any stems in the compost bin!  Another option is to harvest some of the outer leaves as needed.  This will encourage more leaves in the middle to grow.  Also, this method allows you to harvest earlier and later than the maturity date – that’s why it is an approximate date!  3) It is best to harvest in the morning or evening.  4) Soak the leaves or head of lettuce in a bowl of cool water.  This will get rid of any bugs and dirt and make the leaves a bit crisper.

Short Term Storing Tips:   5) After the arugula leaves dry, put them in a plastic or glass container.  6) Store the container in the crisper drawer of the fridge.

Long Term Storing (Freezing) Tips:

5) After the arugula leaves dry, individually freeze the leaves.  Another option is to chop the leaves and freeze them in water, broth or oil in herb or ice cube trays depending on how you are going to use them in the future.  6) Put the frozen arugula leaves or cubes in an airtight container in the freezer.
