Aztec Cave Beans

I first came across Aztec Cave Beans because I was trying to find a pole version of the pinto bean.

Features:

1) Aztec Cave Beans are in the same family as the pinto beans – they are cousins!

2) These beans are also known as Anasazi pole beans.

3) Aztec Cave plants will vine up to at least 6 feet tall.

4) The blooms are white and turn buttery yellow.

5) When dried, the beans are purple with splashes of white markings.

6) While you can harvest the beans fresh when they are young, I think it is worth waiting to save them as dried beans.

7) The pods will reach up to 7 inches long.

The last dried bean we reviewed was the cranberry bean.
