Types of Squash

Just like radishes, there are the two main types of squash:

Summer: This type of squash is planted in late spring, grown in a bush format and harvested during the summer when the fruits are smaller and the skin is softer. This squash does not store as long.

Winter: This type of squash is planted in late spring, typically grown in a vine format (there are some varieties that grow in a bush format),and harvested in the fall when the fruits are fully mature and the skin/rind hardens. This type is known for long storage and different varieties that offer color, flavor and shape choices.
