Just like broccoli, there are two main types (head and florets) of cauliflower. While the buds/flowers are the main attraction, you can also eat the stems and leaves.
Head – this type forms a main head:
- Rounded – this type has smooth tops. In addition to white, you can find some more colorful options like orange, green or purple.
- Romanesco -this type has pointy, spiral tops and comes in bright green or white. Also, this option has a nuttier flavor.
Florets/Sprouting – this type only produces smaller florets. I’ve only seen this one in white. Also, this type is more heat resistant.
