If you want a larger variety, then I would suggest:

Here are two choices with light green stems and green leaves:
Suzhou Baby
Shangai Green
If you want a little color in your garden, you should look at:
Vivid Choi – this variety has pink, vivid pink and purple stems and veins with green leaves.
Purple Lady – This variety has light green stems and purple leaves!
While I have never grown any Choy Sum ( flowering choy or cabbage), this might be the year! With this choy, you eat the stems, flowers and leaves. You can find it in green or purple.
