Roots

The main attraction of the Roots Vegetable Category grows underground.  I sorted Roots by plant famiily:

Carrot Plant Family:   carrots, celeriac, parsnip and parsley root

Brassica Family:  radish, rutabaga and turnip

Aster Family: salsify and scorzonera

Amaranth Family:  beets

When you look at the above list, you may think a forgot some veggies but I didn’t.

Similarities:   Roots are hardier than some of the other veggie categories.  When you harvest Roots, you need to trim the stems and leaves off for better storage.   You can steam and roast the above veggies or eat them raw.  Unlike the Tubers Vegetable Category which grows underground and multiplies, you will get one root plant from each seed.

Differences:  Some root veggies (rutabaga, parsnips and salsify) taste even better after they’ve been kissed by a frost.  Some root veggies (celeriac, celery root and parsnips) take a long time to mature and others mature quickly like radishes.  Some root veggies like beets and carrots come in multiple colors.   

Raised Bed Ideas: I like to grow Roots in their own raised bed so I don’t damage other plants! For instance, if you interplant carrots in between your pepper plants, you could damage the roots of your prized pepper plants when harvesting the carrots. When you group and sow these Roots by maturity date, you can clear an area for successive growing. Another idea is to sow summer radishes in between other Roots because they will be ready to harvest before some of the other Roots mature. Since radishes are easy to harvest with just your hands and a quick tug, they won’t disturb the other Roots that still need plenty of time to grow.
