Root Depth is Important

It is important to consider how deep the roots are for different vegetables.  Here’s why: 1) Interplanting – you have to be careful that you don’t disturb a shallow rooted veggie when try to dig out a deep rooted veggie. 2) Moisture -You need to make sure shallow rooted veggies  don’t dry out.

Here are the categories:

Shallow Roots:   Arugula, Bok Choy, Broccoli, Brussels Sprouts, Cabbage, Cauliflower, Celeriac, Celery, Collards, Corn, Endive, Garlic, Lettuce, Onions, Radishes, Spinach

Peppers have Medium Roots

Medium Roots:  Beans, Beets, Carrots, Cucumbers, Eggplant, Peas, Peppers, Rutabagas, Summer Squash, Turnips

Deep Roots:  Artichokes, Asparagus, Melons, Okra, Parsnips, Potatoes, Pumpkins, Sweet Potatoes, Tomatoes, Winter Squash

As for Potatoes, I included them in the Deep Root category but they could be included in the Shallow Root category as well.  You initially plant the seed potatoes a few inches below the soil line and then keep hilling up the dirt around them.

Another rule breaker is carrots some are tiny and some are really long.

There are more exceptions depending on the variety but the above list should get you started thinking about where you want to plant your veggies.
