Prepping for Winter – Harvesting Vegetables

Ripening Tomatoes on Racks

This weekend it was rather cool.  On Sunday night, it got below 30 degrees – yikes!  Since there was frost on the horizon, I harvested a lot of tomatoes, some peppers and two small zucchinis on Saturday.  Of course, I waited until the last minute to start get ready for winter.

I pulled the stakes, support hoops and the plants.    Unfortunately, I still don’t have a compost pile for my plants – may next year – how about it Alan?  If you haven’t figured it out yet, Alan is my husband and my gardening architect, engineer, builder and jack of all trades.

Back to the tomatoes. . . I put racks in my kitchen and in the garage because the tomatoes will ripen way too fast if I put all of them in the kitchen because we had to turn on our heater.   I use cookie drying racks and those white covered wire racks (see above) that are sold as efficient space savers for your kitchen cabinets.  They are also great for circulating air around the tomatoes so they ripen evenly

Since I have quite a few rakes of tomatoes ripening, it may be time to make some fresh tomato sauce or salsa.  In the meantime, I’ve been eating a lot of tomatoes on my salad and my favorite tomatoes, mozzarella and basil salad.
