Alan made some refrigerator pickled onions today which means you store them in the refrigerator without canning them.
Ingredients:
1 medium onion
1/2 cup water in saucepan
1/4 cider vinegar
1/4 cup white vinegar
1 1/2 tsp kosher or rock salt
1 1/2 tbsp honey, maple syrup, agave or white sugar
Steps:
1) Thinly slice the onion with a mandolin.
2) Pack the onion sliced in a pint sized mason jar.
3) Simmer the remaining ingredients until the honey/sugar and salt are dissolved.
4) Pour the liquid over the onions.
5) Put the mason jar aside and bring it to room temperature.
6) Refrigerate the mason jar filled with the pickled onions.
