How do you know when to harvest spaghetti squash? There are two easy signs which are. . .1) It will turn white to pale yellow to yellow. 2) The vine will wither and turn from green to cream/beige. If your spaghetti squash meets the two signs, then cut the stem by leaving about two inches attached to the squash.
Don’t forget that spaghetti squash is a winter squash so it matures at a slower rate then summer squash. Winter squash typically matures around 90 days after sowing or transplanting.  I previously explained how to sow and grow winter squash – please click on the link!
