We already reviewed how to sow and grow spinach. Now it is time to go over how to harvest and store spinach.
Harvesting Tips:
Most spinach will mature in about 50 days or less.
The best time to harvest is in the morning or evening when it is cooler or when the sun is not intense.
You have two main choices: harvest the whole spinach plant or the leaves as needed. I prefer to harvest as needed for fresh spinach.
Storing Tips:
Put fresh spinach in an airtight container. It should last a week or two.
If you want to make the leaves a little crispier, then let them soak in some water for a few minutes.
If you want to cook with the spinach at a later date, I would blanch it for two minutes and freeze it in an airtight container. Blanching means to put the spinach leaves in boiling water for 2 minutes and then ice water for another 2 minutes.
I like to use for blanched and frozen spinach in stuffed shells!
