NuMex Joe E. Parker Anaheim Green Chile Peppers

In my opinion, NuMex Joe E. Parker is the best Anaheim green chile pepper.   This variety is tasty and is mildly hot which means that it can range between 500 and 2,500 on the Scoville heat index.  I think my peppers are closer to the 2,500 marker!  Also, the plant is very productive.

This variety takes between 10 and 25 days to germinate so you may need a little patience.  I start my Anaheim peppers indoors three months before the last spring frost.  It is recommended that the plants be transplanted between 2 weeks and one month after the last spring frost.  The plants should be spaced between 18 and 24 inches.  NuMex Joe E. Parker matures early around 75 days after transplanting.

These Anaheim peppers should be picked when they are between 6 and 8 inches long.    If you let this variety turn red, they will get sweeter.

Charred Anaheim Peppers

I prefer to harvest the NuMex Joe E. Parker peppers when they are green.  We like to either grill them or stuff and roast them.   I don’t take the skin off all of the hot peppers just the ones that are thick skinned like Anaheim peppers.

When I get too many Anaheim peppers, I do the following so I can save them for later:

  1. Char the skin on the grill,
  2. Put the pepper in a bowl with a plastic cover and a damp paper towel,
  3. After they sit for a while, remove the skin,
  4. Individually freeze them on a baking pan, and
  5. Store them in an air tight container in the freezer.
