Spring Salads

Spring Salad

As the season unfolds, I include different veggies in my salad.  In the spring, I like to include: 1) different types of lettuce, 2) sliced sugar snaps, snow peas, scallions / pearl onions,  3) shredded radish and kohlrabi and 4) tomatoes and cucumbers (when available).  Depending on my mood or what is available, I might add some arugula, spinach or kale.  I don’t like all three together since each has a unique flavor.  If you don’t like the flavor of radish or kohlrabi, you can always shred them like I do to soften the punch and still get the nutrients!

Because of the strong flavors of radish and kohlrabi, my favorite dressing for this type of salad is Sweet Vidalia Onion Dressing or Asian Sesame Dressing from Ken’s Steakhouse.
