Cool Season Vegetables

Cool Season Vegetables include ones that grow best when the air and soil temperatures range between 40 and 70°F.  Many of these vegetables will bolt or stop growing with the heat of summer.  Just like the cold season vegetables, you can extend the growing season with the following vegetables by using cold frames and/or hoop tunnels with garden fabric:

Beets, Cabbage, Celeriac, Celery, Fava Beans, Fennel, Kohlrabi, Lettuce, Peas, Onions, Potatoes, Radishes, Rutabagas, Scallions, Yellow Shallots, Turnips

There are several perennials that are in the cool season vegetables:  Artichokes, Asparagus, Endive, Radicchio, Rhubarb

These Cool Season Vegetables tend to bolt in heat:  Broccoli, Cauliflower, Romanesco

Just because the above vegetables are cool season ones doesn’t mean that they are all harvested in the spring or early summer.  Some like artichokes, potatoes, onions and shallots are ready to be harvested in the summer.
